Super Salad

Today, I had salad & water for lunch. Mal, my beautiful sister, and I have a long standing joke about Salad and Water. When we are at a resturant and we are trying to be cheap or healthy, we sarcastically say we are going to eat "salad and water". Well, this is not your average salad I had today. Let me break it down for you...

I cut up about 2 cups of lettuce, 1 medium cucumber and about 6 cherry tomatoes. These are all calorie free foods, or in Weight Watchers terms, "free". Plus, lettuce and cucumbers are mostly water, so your body takes more energy metabolizing them, thus burning calories. So, in my head and using "fat girl math", I just lost weight when I ate a bite of cucumber!

This makes a big salad.


I also added my "salad shakey" as my 4 year old calls it. It is one of my favorite products made! I use it on every salad I eat, and it is SO yummy! I even have some at work in my locker so I can make sure and always have it! It is a great low calorie option to bacon bits! There are 35 calories in each serving, which is 1 1/3 Tbsp. Two or three good shakes will do wonders!




I also found these beauties at United Marketstreet. They are so yummy, low calorie and add a great crunch and scoop for your salad. They only have 60 calories for 2 crackers, and they're huge (about 6 inches long). 




And, because I can't give up my cheese, I add a little. I feel like I'm spoiling myself. Plus it's got calcium, right!? It's got 80 calories for 1/4 cup... not terrible.



One problem I've always had is dressing. I can't eat salad without dressing. And, as a rule I hate fat free dressings. A friend of mine suggested this... It's yummy, for fat free dressing. I use a lot too, especially on this big of a salad. I doubled the serving size. So, that will be 90 calories.



So, if you're keeping up... that is a total of 265 calories! And, I'm stuffed!

Another hint, if you use the loseit.com app, I built a "food" and called it Super Salad for 265 calories. Instead of having to add each ingredient itself, it's just one click. 

I'm going to Zumba at 4:30... it's my first in awhile. Wish me luck!
